The Day the Minions Visited My Kitchen Counter

One of the most fun memories I have at my kitchen counter is the day one of my very best girlfriends, Corene, and I decided to make Minion Cupcakes for our other very best girlfriend, Crystal. Ms. Crystal was being installed as the president of our local legal secretaries association (a very prestigious position and honor) and Ms. Corene and I had been teasing her about how she would have to manage all of her "minions" once she became president. Well, you can see where this is going. Yep, we decided to make Minion Cupcakes for her very proper and professional installation ceremony. We even made a special Minion for Ms. Crystal, who ALWAYS carries a fabulous handbag and wears her glasses on the top of her head.
This does require a little coordination and assembly and, as you can see from the photo, we had a little help from a lovely bottle of wine.
Here's how we did it.

Minion Cupcakes

(makes 24)
1 Box of Funfetti Cake Mix (and all ingredients listed on the box to make cupcakes)
24 Paper Cupcake Liners
1-2 Containers of Vanilla Frosting (Funfetti Frosting would be fun, too)
Candy Eyes
Tube of Black Piping Decorator Frosting
Chocolate Sprinkles
12 Hostess Twinkies
Prepare the cake mix as directed on the box. Line two cupcake pans with paper liners. Fill each cupcake liner halfway or two-thirds full of cake batter. Bake as directed. Allow to cool to room temperature, then frost the tops just to the edge of the cupcakes.
Cut each Twinkie in half. Take two candy eyes and place a dot of black decorator frosting on the back of the eyes. Place the eyes where you want them on the Twinkie half. Next, using the Black Piping Decorator Frosting, create "glasses" around the candy eyes, and a line or smile for the mouth.
Now, take two or three chocolate sprinkles and carefully push them into the top of the Twinkie so that it resembles spikes of hair. Be patient with yourself, you'll get the hang of it! You have just created a Minion body!
Take a Minion body and place it gently in the center of a cupcake. Use a little more vanilla frosting around the bottom of the Twinkie if you need it. Repeat until you have all 24 cupcakes done.
Ta-Da!! You have Minions!!! You can have a lot of fun with these. Get creative and silly, especially if you get the kids involved.
(By the way, Ms. Crystal's Minion Cupcakes were the kit of the installation ceremony!)
