Spring is for Lemons!

This Lemon Chicken Linguine is such a beautiful and tasty dish. It is just bursting with lemon flavor, making it a great option for lunch or dinner, and it only takes about 30 minutes to put together. The fresh parsley and basil really complement the citrus flavor. This feeds a crowd, so feel free to reduce the amount of ingredients to half if you just want to feed 2-3 people generously. For a really special twist, use jumbo shrimp and scallops instead of the chicken.


INGREDIENTS

1 lb Boneless skinless chicken breast

1 lb Linguine, cooked al dente and drained

1 small onion, sliced

3 garlic cloves, minced

2 TBSP Olive oil

2 TBSP Butter

1⁄4 Teaspoon dried thyme

1⁄4 Tsp red pepper flakes (optional)

2 Lemons

1 TBSP Fresh parsley, chopped

1 TBSP Fresh basil, chopped

salt and pepper


DIRECTIONS

In a large skillet, heat the olive oil and the butter over medium heat. Add onions and garlic. Sauté gently for 1-2 minutes. Generously season the chicken with salt and pepper, the dried thyme, and red pepper flakes. Add the chicken breasts to the pan and cook completely. Remove chicken from the pan. Add the juice and zest of the lemons to the pan to deglaze. Combine this with the linguine and parsley and basil. Season with additional salt and pepper to taste. Serve pasta topped with the chicken. Add grated parmesan if desired.
